Harlem Valley Homestead: Kimchi & Vegetable Fermentation

Fermentation is one of the oldest food processing methods still used today, and a staple in our fall harvest season for the winter ahead. Kimchi is a traditional fermented dish made of vegetables and variety of seasonings, a staple in Korean cuisine.

In this workshop we will cover the basics of preparing kimchi and other ferments, why they’re good for your health, and how to make it yourself using a variety of different vegetables. Alicia will share her favorite recipes and encourage you to experiment to create your own. Participants will take home an understanding of different types of controlled ferments and a jar of vegetables that will age into a delicious kimchi.
Water, salt, time, produce from the farm and millions of volunteer lactobacilli will come together to transform into something delicious and good for you!

Harlem Valley Homestead: Pasture, Meat and Fire

Join us for an overview of our grazing program, workshop on open fire cooking, and a shared tasting. Experience the cows and grazing cycle firsthand, learn the basics of growing good meat on grass and how to cook over an open fire.

We’ll cover the principles of cooking and manipulating heat using coals, ash and direct fire. By the end of the course, you will have a clear understanding how to prepare delicious dishes using pits, wood stoves, wood-fired ovens, à la ficelle (turning a string into a rotisserie), searing, braising, and even baking.

The workshop will be followed by shared snack with a selection of farm produce and meat we cooked together.

Harlem Valley Homestead: First Friday Community Potluck

You're invited to join us at the Homestead to share food together, learn more about the farm and the people involved.

Through the Summer and Fall on the first Friday of the month, we host a potluck open to the entire community on the back lawn of the big white house. Anyone and everyone is encouraged to join. We ask that you try to bring a dish to share, but most importantly bring yourself!

The potluck will start with a short conversation on what is happening on the farm, followed by shared food and conversation. get to know the Homestead team and your fellow neighbors!

This is a complimentary community event.

Harlem Valley Homestead: Farm Garden Bouquet Making

From seeding to arranging, learn the art of growing and designing bouquets with your own cut flowers.

In this three hour class, participants will begin by exploring different garden planning techniques. We'll share our favorite varieties of heirloom flowers and herbs grown in our cutting gardens. After a walking farm tour for inspiration, we'll demonstrate the best methods for harvesting and preserving flowers.

Following the garden walk, the hands on portion of the workshop will begin. Each participant will be provided with a beautiful selection of fresh cut flowers and herbs in addition to the blooms harvested on their walk. We'll walk step by step through the basics of crafting a professionally designed bouquet (even if you're a complete beginner).

Participants will make their own hand-tied bouquet to take home. Farm fresh flowers, a light snack and refreshments from will be provided. Please dress for outdoor activity: walking shoes, sunhats, and sunscreen!

Harlem Valley Homestead: Medicinal + Culinary Herb Walk

Summer is the time to discover tastes, textures, sights and smells of herbs common and unfamiliar. Join Harlem Valley Homestead as they roam from the backyard and pastures to the farm garden, to meet new plants and learn about their uses in food and medicine.

Participants will learn how to properly identify, cultivate and harvest a variety of plants in the field and garden.

After the walk we will enjoy tasting a selection of herbal teas made from herbs both cultivated and wild.

Harlem Valley Homestead: Open Fire Cooking 101

Summer is heating up, and so should your cooking! This two hour workshop will teach participants the basics of open fire cooking by taking culinary techniques from the home kitchen to the outdoors.

Participants will begin the workshop building a fire. As the fire evolves, learn the art of manipulating coals and the placement of dishes for perfectly cooked food. While lunch cooks, they will cover how to select the best equipment and tools. They will also touch on cooking in wood-fired ovens, the fireplace, wood stoves, pits and grills. No prior experience is necessary, appropriate for both the experienced cook and the beginner.

Join Harlem Valley Homestead for an afternoon of shared work and shared food, centered around the seasons of their working farm. Learn more about the farm, get your hands dirty, and connect with like-minded community members. They will follow with a shared seasonal snack from the Homestead garden.

Participants should bring work gloves and water, sunscreen, bug repellent, etc. Open to all ages.
